Elements and Performance Criteria

1. Label carcase to specification
   • Identify correct labels
   • Attach labels to carcase according to workplace and regulatory requirements
   • Monitor and replenish stocks of labels according to workplace requirements
2. Stamp or brand carcase to specification
   • Stamp carcases with appropriate (approved) Department of Agriculture or state meat authority stamps
   • Stamp carcases with establishment code or identification stamp
   • Brand carcases with workplace and/or AUS-MEAT grade brands in accordance with workplace requirements
   • Check stamps and brands for legibility

Performance Evidence

The candidate must label and stamp carcases in accordance with regulatory and workplace requirements.

The candidate must:

differentiate between the different types of labels

differentiate between the different types of stamps and brands

label and stamp carcase to hygiene and sanitation requirements

label and stamp carcase to workplace and regulatory requirements

consistently apply brands so they are legible

observe relevant workplace health and safety requirements

use communication skills relevant to work instructions and Standard Operating Procedures (SOPs)

comply with security arrangements for stamps when not in use
