Elements and Performance Criteria

1. Define the RI
   • Explain RI measure and the uses of predictive microbiological model
   • Identify regulatory requirements for process compliance using the RI
   • Identify factors affecting microbial growth
   • Identify RI model parameters
2. Collect temperature data for RI
   • Set up data logger correctly
   • Place temperature sensor in product, taking into account the point of microbiological concern and recommended placement
   • Process time-temperature data into correct format for RI calculator
3. Select and define process to be validated
   • Define process in terms of output
   • Define production lot
   • Identify variables in the process
   • Identify number of measurements required
   • Identify when and where data collection should occur
