Elements and Performance Criteria

1. Store wild game animal carcase
   • Use rails according to workplace requirements to transfer wild game animal carcase into the chiller according to workplace and health and safety requirements
   • Identify and store carcase meat product in appropriate area according to workplace requirements
   • Chill and store carcase meat product at correct temperature according to workplace and regulatory requirements
   • Space carcases to achieve chilling and storage temperature requirements
2. Perform basic refrigeration maintenance
   • Perform basic troubleshooting on refrigeration units
   • Assess chiller operation and condition
   • Monitor gas levels and defrost cycles
   • Perform manual defrost
3. Monitor wild game animal carcase temperature
   • Monitor deep muscle time/temperature and record according to workplace requirements
   • Undertake data logger monitoring according to regulatory and company requirements
   • Calibrate thermometers according to workplace requirements
