Application

This unit describes the skills and knowledge required to inspect wild, field-shot game meat during processing.

This unit is only applicable to those inspecting wild, field-shot game carcases in a processing plant.

No occupational licensing, legislative or certification requirements are know to apply to this unit at the time of publication.

1. Describe wild game meat classification requirements

1.1 Identify animal habitat in accordance with workplace requirements

1.2 Identify and classify wild game meat in accordance with workplace and regulatory requirements

2. Identify distinguishing characteristics and features of game animals

2.1 Identify differences between game and non-game species

2.2 Identify structure, location and function of varying body systems

2.3 Identify organoleptic or sensory differences between game and non-game animals

3. Inspect wild game meat

3.1 Inspect wild game meat in accordance with regulatory, hygiene and sanitation, and workplace health and safety requirements

3.2 Detect and identify abnormalities in wild game meat

3.3 Identify major diseases and defects of game

3.4 Inspect carcase parts and organs in accordance with workplace and regulatory requirements

3.5 Make dispositions according to regulatory and workplace requirements

3.6 Complete reporting and recording requirements

Evidence of Performance

Evidence must demonstrate the candidate's consistency of performance over time at production speed.

The candidate must inspect wild game meat.

The candidate must:

list the main wild game meat animals

list and describe major diseases and defects of game

identify and apply relevant workplace health and safety requirements

inspect wild game meat in accordance with workplace and regulatory requirements

identify abnormalities or diseases in wild game meat

access and explain regulatory requirements for wild game meat inspection

complete mathematical operations required to calculate or establish regulatory compliance

identify useful learning resources when working with unfamiliar species

identify sources of contamination and take corrective action

take action to improve work performance as a result of self-evaluation, feedback from others, or changed work practices or technology

use relevant communication skills

work with processing team to ensure carcases are presented correctly and in a timely manner


Evidence of Knowledge

The candidate must demonstrate a broad factual, technical and theoretical knowledge of:

requirements for classifying animals or carcases as wild game

basic structure of game animals

regulatory requirements for handling wild game meat

distinguishing characteristics and features between the game and non-game animal


Assessment Conditions

Competency need only be demonstrated on the inspection of one game species.

Assessment must include utilising wild game field shot carcases.

As a minimum, the following three forms of assessment must be used:

quiz of underpinning knowledge

workplace demonstration

workplace referee or third-party report of performance over time

Assessors must satisfy current standards for RTOs.
